6. Avoid Overcooking and Steaming the Popcorn

Be mindful of the popping time and avoid overcooking the popcorn. Overcooked kernels can become misshapen and lose their roundness.

When popping switches from rapid fire to about 2 seconds between pops, immediately remove the pot from heat, crack the lid and dump the popcorn into a large bowl or tray. This prevents the popcorn from overcooking, and releases trapped steam for crisp results. Stir or toss gently to evaporate some moisture to avoid sogginess.

 

7. Add Flavor Carefully

After letting the popcorn rest briefly to release excess steam, season it while still warm so the flavors like salt can stick better. You can slightly mist or drizzle a low-moisture fat (such as melted Supreme Colored Coconut Popping Oil with Butter Flavor) as a binder. Then, sprinkle dry, finely ground seasonings (e.g., butter salt, cheese powder, spices and dried herbs) evenly and toss gently to avoid breaking the mushroom popcorn or losing its round shape.

For extra-crisp mushroom popcorn, remember not to use seasonings which contain too much moisture since excess water content can make the popcorn soggy.

When using our Supreme Caramel or Chocolate Popcorn Glaze to cook with the kernels and oil, a popper with a stirring function is highly recommended. If your equipment doesn’t have this function, be sure to keep the mixture moving constantly to prevent the glaze from burning due to heat concentration.

To finish, bake the seasoned popcorn at 90°C to 120°C for 45 to 60 minutes to dry it out and make it extra crunchy. (This step is optional, depending on your preferred texture.)

After allowing the seasoned popcorn to cool briefly to let some heat and moisture escape, store it in an airtight container to maintain its shape and freshness. Handle the popcorn gently to avoid crushing the mushroom popcorn, which can flatten or distort their round form.
